History
The story of the oysters Charente-Maritime goes back up to the Roman era. The richest families close to the emperor were supplied to dress their banquets.
The use of the old Salines, becoming obsolete at the end of the XIX century, has made the beginning of the modern area and Charente-Maritime oyster’s starts.
In 1922, oysters in the Charente-Maritime bay suffered a big epidemic that went over with a complete extermination of the breed.
Few years later, the Portuguese oyster, adapted very well to the area and replaced the original oyster from Charente-Maritime.
In the year 1967, a second epidemic devastated almost the totality of the species. This time, an oyster from Japan « Crassostrea Gigas » has replaced the extinguished Portuguese. This one is, nowadays, maturing in our Claires in Charente-Maritime for our biggest pleasure.
