How to keep oysters fresh at home
The most important things are temperature and humidity.
The oysters should be conserved at a temperature of 4ºC to 8ºC which is the usual temperature in a fridge. They have to be hydrated with crushed ice so the dry air of the fridge doesn´t damage them.
Please remind that the oysters have to be alive when consumed so they should never be frozen.
The second important thing is the position of the oyster: they always should be kept with the deep side down so they can naturally retain their water and be served in optimal conditions of taste and texture.
The best container is the original Amélie box in which the oysters are delivered. The box is made out of black poplar and shavings of chestnut wood that can retain high volumes of water and drain the excess of liquid when needed. We complete it with a thermo-intelligent paper that maintain an adequate temperature.
If open, the box should be closed with the original top cautiously kept with rubber band or weight.
